Food truck owner Joll Torres will realize a years-long dream next month when his new Mexican takeout restaurant opens in Jonesboro.
El Rolas, like Torres’ food truck of the same name, will serve Mexican classics including tacos, burritos, nachos and quesadillas, the amateur chef said. Meals are around $10.
“When someone says Mexican food truck, they only think about tacos,” Torres said. But I’m a little more than that.”
Torres started his food truck about two years ago and it soon grew into a full-time endeavor.
“People encouraged me, saying ‘Hey, when are you going to open your restaurant.’ We’d get a lot of people at the trailer, lined up,” Torres said. “That’s what motivates me.”
Eventually, Torres took the advice of his friends and family and started plans to open a brick-and-mortar location at 824 E. Main St., Sanford. This week, all that’s left to do is clean up the kitchen and start making food for an opening in early March, Torres said.
The restaurant will be open from 10 a.m. until 10 p.m. seven days a week, according to Torres.
He hopes to one day expand the takeout joint into a sit down restaurant, he said. For now, though, takeout is the way to go, especially with the coronavirus still spreading.
“We’re working on baby steps,” Torres said. “Baby steps.”
